Iced Hibiscus Tea

Ingredients

  • 2 quarts plus 1/2 cup water
  • 1 1/2 cups dried hibiscus flowers (1 1/2 ounces; see Note)
  • 1 cup sugar
  • Ice cubes

Directions

  1. Bring the water to a rolling boil in a medium saucepan. Simmer over moderate heat for 5 minutes. Stirring constantly, add the sugar. Cook until it dissolves. Pour the drink into a medium-sized bowl. Fill the larger bowl with water and place the smaller bowl in it. The drink should be stirred every 10 minutes until it is chilled. Pour the cooler through a strainer into a large pitcher. Serve in tall glasses with ice.
